Looking for your first Japanese knife but not sure where to start? We've curated a selection of knives that are designed to be great all-rounders with low maintenance. Most you see will be the Gyuto, or the Japanese chef knife crafted in a variant of stainless steel. These will cover almost all cutting tasks. If you like your knives quite long, go for a 240mm. Shorter, go for a 180mm. The most common however is the 210mm.
