Yoshikawa Cook-Pal Ren Nitrided Carbon Steel Induction Wok — 33cm (with Helper Handle)
Nitriding is a heat treatment that drives nitrogen into the surface of the steel, and it changes how a carbon steel pan behaves. The face comes out considerably harder and far more resistant to rust than untreated steel, which means the wok is more forgiving of the mistakes that ruin ordinary carbon steel — a wet night in the sink, a tomato sauce left sitting, a season that never quite took. It also gives seasoning something better to grip, so the patina builds faster and holds on longer.
Made by Yoshikawa in Tsubame-Sanjo, the metalworking region that has been turning out this sort of thing for a few hundred years.
33cm sits in the middle of the range and it's arguably the smartest pick. You get meaningfully more cooking surface than the 30cm, which is what stops a big batch from steaming instead of searing, but at 1.33kg it's still light enough to toss one handed once you've got the hang of it. Comfortable for four to six people without becoming a two-handed operation every time.
The long timber handle detaches and gives you leverage, while the fixed steel helper handle opposite lets you lift it two handed when it's loaded. Pouring spouts on both sides for getting stock or oil out cleanly.
The base is flat, so it sits stable and works on induction as well as gas and everything else.

Seasoning and Care
Give it a quick season before first use to start the patina. The nitrided surface makes this noticeably easier than bare iron, but it still needs doing.
Hand wash only. Dry it properly after every use.
