Porthos - Sardines in Olive Oil

The simplest tin Porthos makes, and for plenty of people the best one. Sardines, olive oil and salt. The fish are cooked before being packed into the tin by hand at the factory in Matosinhos, a fishing town just outside Porto.

This is the classic Portuguese sardine, big and meaty and easy to break apart with a fork. I like them on thick toast with a squeeze of lemon, some finely sliced red onion and plenty of black pepper. They're Kosher certified as well, which is handy to know if that matters in your house.
