It strikes an excellent balance between durability, edge retention, and ease of sharpening. Slightly more ductile than Blue #1, it's widely used in crafting traditional Japanese knives, beloved by chefs for its resilience and sharpness, albeit is slightly softer than Blue 1.

It’s rough around the edges, slightly bent and has all the wabi sabi goodness I’d expect of a Shindo. But MAN does it cut.

The cheapest nakiri I've ever tried, yet the best performing one.

Having now tried nearly every shape of Shindo available, the nakiri is the star. Ghosts through even large carrots, and is a joy to use. Half an hour of sanding to round the spine makes this a knife that puts most knives, at any price, to shame.
