Ventresca is the belly of the tuna, and it's the part people fight over. It carries more fat than the loin, so it's softer, silkier and a lot richer. José Gourmet hand-select the belly pieces and pack them in olive oil with a little salt, and that's all it needs.

If regular tinned tuna is a weekday thing, this is the weekend version. Please don't bury it in mayo. Lay it over a salad of white beans, red onion and parsley, or put it on grilled bread with roasted peppers and let the oil soak in. It's high in protein and omega-3s, but really, it's a treat.
