Jose Gourmet - Stuffed Squid in Ink

Whole squid, stuffed with their own chopped tentacles, onion and tomato, then cooked in a sauce made with their ink and seasoned with pepper, clove and bay leaf. The squid are cleaned and packed by hand, and they come out of the tin soft and tender.

The ink gives the sauce a deep, briny, savoury flavour and that jet-black colour. This is a great one to cook with. Warm it through and spoon it over a simple risotto, or toss it with spaghetti and a squeeze of lemon. If you're eating it straight from the tin, have some bread ready for the sauce.
