José Gourmet's take on the classic. The sardines come from the North East Atlantic and the Mediterranean, and they're packed with tomato and extra virgin olive oil. That's it. There's a little story on the tin about a sardine who wanted to become a tomato, then changed her mind and decided she'd rather just be friends with one, which feels about right.

The olive oil makes the sauce rich enough to use as it is. Warm the tin through and spoon it over soft polenta or crushed potatoes, or make a quick sardine pasta with capers and a big handful of parsley.
