These mussels are fried first, then packed into the tin with a marinade of olive oil, white wine vinegar, garlic and bay leaf. It's the same idea as a Spanish escabeche, where a little acidity keeps everything bright and cuts through the richness.

José Gourmet reckons a dozen or so mussels have about as much protein as a steak, and they're full of zinc, selenium and B12 as well. Nice bonus. I mostly just like them with a cold beer. Pick them out with a toothpick, then mop up the marinade with bread, because it's too good to leave in the tin.
