Blade Type
Blade Type

The Gyuto knife, a cornerstone of Japanese culinary tradition, is a versatile, all-purpose chef's knife. Its name, translating to "beef sword," reflects its proficiency in slicing meat and in more modern times vegetables. However, its slightly curved blade excels in chopping, dicing, and mincing, making it indispensable in any kitchen.

Steel Type Read

Japanese White Steel #1, the purest form in the "Shirogami" (White Paper Steel) series, is highly regarded for its exceptional sharpness and ease of sharpening. With a slightly higher carbon content than White Steel #2, it delivers superior edge retention, but like White 2 cannot be left wet for even short periods of time, otherwise rust spots can occur. If you’re fastidious in your knife maintenance, this knife steel can be extremely rewarding to use.

Isamitsu Hamono

Isamitsu Hamono
About Isamitsu Hamono
Isamitsu Hamono is run mainly by two makers, Yuki Abe-san and Gaku Kanatsu-san, and they're the sort who are never quite satisfied. There's always a better knife to make and a method to refine, and that restlessness is a big part of what makes their work special.
They're also happy to break from tradition where it counts. Rather than working in isolation, they swap knowledge with other blacksmiths and fold those ideas into something that's genuinely their own, and in 2022 they took on a young woman as an apprentice, which is still a rare thing in this world. The result is a style that carries the rustic roots of their old master while layering in plenty of modern tweaks. The blades that come out the other side are understated but quietly stunning.
